Controlled infrared heat caramelizes wood sugars, breaks down harsh tannins, and primes flavor extractives for aging. 

While charring a barrel inevitably toasts a small amount of wood behind the char, a deeper penetration of heat through a deliberate, controlled toast matures a smoother whiskey with a more refined flavor profile. That’s why we’ve built infrared toasting into our process, and offer it on every barrel at no additional charge.

Charring a barrel results in a layer of carbon that acts as a filter, rounding out rough edges as the spirit travels deep into the barrel and back out again throughout maturation. It also results in a small amount of residual toast, the flavorful red layer. When barrels are toasted before charring, the former reaction catalyzes the latter, resulting in greater depth and complexity of flavor.
